Literally ça te dit de... means something like 'does that say to you to...', which makes little sense translated word for word into English — it's simply the fixed casual way to float an invitation among friends. Treat it as a chunk to learn whole rather than something to build up from its individual words, the same way you'd just learn 'do you feel like...' as a fixed English phrase rather than analyzing it piece by piece.

Like je voudrais, pourriez-vous is a conditionnel form used specifically to soften a request into a polite one — pouvez-vous ('can you') would be direct, pourriez-vous ('could you') is gentler and more formal. This lines up almost exactly with English politeness instincts, where 'could you' already sounds softer and more formal than 'can you' — so the underlying logic of softening a request by shifting to a conditional-sounding verb form is one you already have; you just need the French forms to go with it.
